Beyond the Pie: Healthy Alternatives for Your Pumpkin

It is prime time for pumpkin! As scrumptious as a slice of creamy pumpkin pie and a pumpkin spice latte may be, this delectable squash has more to offer. Before you dive deep into the pie dish, try these healthy alternatives:

Frozen Pumpkin Mousse Pie: Food Network swaps out a traditional pumpkin pie with a frozen, airy twist. Instead of a dense, rich pumpkin filling, this pie uses a pumpkin and frozen yogurt mousse to fill its gingersnap pie crust. Yum!

Seeds to Snack Upon: You know roasted pumpkin seeds add a special autumn-ready punch to your snack repertoire, but if you’re getting bored of the salted standby, try these recipes from Real Simple. From Maple-Mocha to Chili-Lime, there is nothing ordinary about these seeds!

Pumpkin Chai Latte: There are few drinks more ubiquitous in autumn than the pumpkin spice latte, but the calorie count in a single cup might be little more than you’ve bargained for. Cookie & Kate has come up with healthier alternative with this homemade Pumpkin Chai Latte. Although we think this recipe is pretty amazing as is, we’d just add one more step: when you brew your chai, use spring water.

Pumpkin Dip – Apple and pumpkin pie are seasonal mainstays, right? Try this twist instead. Slice up a variety of apples to scoop up this luscious pumpkin dip featured in Health Magazine. The dip features a maple syrup and cinnamon kick that perfectly complements the seasonal fruits.

Pumpkin Cheesecake Mousse – This recipe, as shared by Pop Sugar, just looks sinful. It’s surprise ingredient swap (using low-fat or fat-free cottage cheese in place of cream cheese) makes this delectable treat a healthier alternative to traditional cheesecakes. Pop Sugar bets you won’t be able to put your spoon down and we’re willing to accept the challenge (and happy to prove them right!)

Pumpkin Soup – After a heavy holiday meal, you want some lighter fare. One things for sure, it’s hard to go wrong with a hearty soup. Cooking Light has three variations on a creamy, satisfying pumpkin soup. Note: The Chipotle-Spice Pumpkin Soup recipe substitutes apple cider vinegar with water. Don’t forget, for the best results, use spring water.
